Ingredients Needed for Dosa Batter

Here are the ingredients:
- 2½ cups rice (you can use any rice. More rice = crispier dosa) or as you need you can add
- 1 cup urad dal it is important for dosa
- ½ cup pohe (flattened rice) you have then you can add
- 1 tbsp chana dal it is also important
- 2 tsp fenugreek seeds as you need you can add
Note: Don’t soak pohe now. It will be used later while grinding.
Step-by-Step Method
Wash and Soak
- Take 2½ cups rice. Wash it well 3–4 times. Then soak it in water. it is also better for dosa
- In another bowl, take 1 cup urad dal + 1 tbsp chana dal + ¼ tsp methi seeds. Wash this mix well.
- Add water and soak both rice and dal separately for 4–5 hours. or you can add as your need or you can keep as you want
Grinding the Batter
- After soaking, it’s time to grind. it help to get better test
- Grind urad dal first. Add minimum water. Make a fine paste. Don’t keep it coarse.it is for the good test
- Transfer the dal paste into a big pot. or you can add in other thing
- Wash ½ cup pohe properly (no need to soak).you have than you can add it in this
- Now grind rice and pohe together in two batches. mix it properly
First batch:
- Half rice + half pohe. it is also important Second batch:
- Remaining rice + remaining pohe. you can use as you need or keep it like this only
- Once both batches are ground finely, add them to the same pot.it is important process
Add Salt and Mix
- Add salt to taste to the batter .and also for the good test
- Mix everything nicely. and get better test to the dosa
- You can add a little water if needed to adjust the consistency. or you can add as you need
- If you want a nice golden colure dosa, add ½ tsp sugar. it is also important for the dosa
Fermentation
- Cover the batter and keep it for fermentation for 10–12 hours (overnight is best).or you can keep more time also you can keep more time also

Important Tips
- No need to add salt again after fermentation. this process is very important for the dosa

- Heat a dosa pan on medium flame. or you can take another pan also
- Apply a little oil and spread well .or you can apply more oil also
- Pour a ladleful of dosa batter at the center and spread it evenly in circular motion.this motion is very important for the dosa
- Cook on medium heat until it turns golden and crispy. it get better and good test
Pro Tips for Perfect Dosa:
- If pan is too hot, dosa batter will clump and not spread properly. spread it properly this is also important for the dosa
- Reduce flame or turn off gas for a minute before pouring next dosa. or you can keep more time also
- Avoid splashing water on a non-stick pan, it may damage the coating. use as following here is
- Instead, turn off the gas, wait a bit, then spread the batter. or you can spread better as your need also
