Step 3:Juicy Chicken Prep
Take 6-7 boneless chicken thighs. These are better than breast pieces for a burger because they stay juicier. First, dock the chicken with a knife—poke small holes so the marinade goes inside. this is also important step for the burger For the marinade:
- Salt to taste as you need in burger you can add it
- A pinch of black pepper you have then you can add in the burger

Mix everything well and massage the marinade into the chicken. Then keep aside for 30 minutes to let it soak properly. you can keep more time also 45 minutes also
Step 4: Crumbing the Chicken – Like a Pro!
Take 3-4 cups of refined flour (maida) in a wide bowl. Add: or you can add as you want
- Salt as you need you can use
- Pinch of black pepper this is important for the burger
Now take a piece of marinated chicken, coat it in the flour, and massage for 30-45 seconds to form texture. Then dip in ice-cold water for 5-10 seconds. Lift out and immediately put it back in the flour. Again massage for a full minute. this step is also important for the burger
This double-coating method creates crispy tit-bits and crumbs, which become super crunchy after frying. Shake off the extra flour before frying.
Step 5: Frying the Chicken – Get That Perfect Crunch
Time: 04:06 to 04:48
Heat oil to 170°C. Now gently release the chicken into the hot oil. Don’t just drop it—place it carefully to keep the crumb layer intact. Fry 2-3 thighs at a time.
Fry for 6-7 minutes on medium-high flame, turning in between. The outer crumb should become golden brown and crisp, and the chicken cooked through.
Once fried, take it out and let the excess oil drip off on a sieve. While still hot, sprinkle the earlier prepared Peri-Peri seasoning on both sides.
