What is Kandha Poha?
Kandha Poha is a light, fluffy, and savoury breakfast made from flattened rice, onions, peanuts, and a mix of spices.
- Kandha = Onion this is the main step of the poha
- Batata = Potato (optional) this we will add to get good test while eating
- Pohe = Flattened rice or you can use any type of poha

Step-by-Step Recipe: How to Make Perfect Kandha Poha
Time Needed
- Prep time: 5 mins or you can take more time also
- Cooking time: 10-12 mins you can also use more time to this
- Total time: Under 20 mins
Ingredients
- Poha (Thick variety) – 2 cups this is the main sour the poha
- Onion – 1 medium, chopped this is also important for the poha
- Green Chilies – 1-2, chopped this will giver you good test while eating
- Boiled Potato – 1 small (optional) or you can add more potato also in it
- Peanuts – 2 tbsp you have then you can add it to it
- Mustard Seeds – ½ tsp this is also important for the poha
- Cumin Seeds – ½ tsp as you neecd you can add it
- Curry Leaves – 6-8 this is use full for the the better test
- Asafoetida (Hing) – A pinch you have then you can add it to the poha
- Turmeric – ¼ tsp this is use full for this colure
- Salt – to taste as you need you can add it to the the poha
- Sugar – 1 tsp (optional) this is also important for the better test
- Lemon Juice – 1 tbsp this is also important for the test
- Coriander – chopped you have then you can add it
- Oil – 2 tbsp this is use full for the the frying the poha
Prep Work: Washing the Poha (00:43 min mark)
This is very important.
Do NOT soak the poha, only wash it.
- Take poha in a sieve or colander.
- Rinse it with room temperature water.
- Let all water drain out.
- Add salt and lemon juice right now.
- Mix it gently with a fork, not with hands.
- Let it rest for 5 minutes.
This way the poha becomes soft but not sticky.
Cooking the Poha
Step 1: Roast the Peanuts
- Heat a little oil in a pan.
- Add peanuts and roast till they get golden colour.
- Remove and keep aside.
Step 2: Tempering (Tadka)
- Add oil to a pan.
- Add a pinch of hing (asafoetida).
- Add mustard seeds – let them crackle.
- Add cumin seeds and curry leaves.
- Add onions and green chillies.
- Saute for just a minute – onions should stay slightly crunchy.
Step 3: Add Spices and Potatoes
- Add boiled potato cubes.
- Add turmeric.
- Mix gently and cook for 2-3 mins.

This step removes the raw flavour of turmeric and brings a nice yellow colour.
Step 4: Add Poha
- Add the drained and rested poha.
- Use a fork to fluff it up.
- Add salt and sugar now.
- Add roasted peanuts.
- Add fresh coriander and lemon juice.
- Lift and drop the poha while mixing. Never press poha while mixing. It will turn sticky and mushy.
Final Step: Steam Cook
- Cover and cook the poha on medium flame for 2-3 mins.
- Switch off the gas.
Kandha Poha is ready to serve!
