Chicken Pakora is a crispy fried chicken snack made with boneless chicken, spices, onions, besan (gram flour), and rice flour. It is marinated, coated, and deep-fried to perfection. The taste is spicy, tangy, and very crispy on the outside while juicy inside.

Here are the basic ingredients you need for this amazing chicken pakora:
For Marination:
- Boneless Chicken – 2 medium-sized pieces (cut into thin slices)
- Garlic – ½ clove (crushed or chopped)
- Salt – 1 teaspoon
- Turmeric Powder – 1 teaspoon
- Ginger Garlic Paste – 1 tablespoon
For Coating:
- Onion – 2 medium (sliced)
- Rice Flour – 1 big spoon
- Gram Flour (Besan) – 3 big spoons
- Kashmiri Red Chilli Powder – 1 big spoon
- Red Chilli Powder – 1 teaspoon
- Garam Masala Powder – 1 teaspoon
- Coriander Powder – 1 teaspoon
- Red Food Colour – A pinch (optional)
- Lemon Juice – 3 tablespoons
Step 1: Preparing the Chicken
- Take ½ garlic clove, crush it, and add it to a bowl.
- Add 1 teaspoon salt, 1 teaspoon turmeric, and 1 tablespoon ginger garlic paste.
- Mix well with boneless chicken pieces.
- Let it marinate for at least 1 hour. This helps the chicken absorb all flavors.
Tip: The longer you marinate, the better the taste. 2 hours is even better.
Step 2: Add Onion & Flours
- Add 2 medium-sized sliced onions to the marinated chicken.
- Now add:
- 1 big spoon rice flour
- 3 big spoons gram flour (besan)
- Rice flour makes it extra crispy.
- Besan gives that classic pakora taste.
Step 3: Spice it Up
Now comes the spicy masala part:
- Add 1 big spoon Kashmiri red chilli powder
- Add 1 teaspoon red chilli powder (for heat)
- Add 1 teaspoon garam masala
- Add 1 teaspoon coriander powder
- Add a pinch of red food colour (optional for nice color)
- Finally, squeeze 3 tablespoons lemon juice

Mix everything very well with your hands. Make sure every piece of chicken is coated nicely.
You may add a little water if the mixture feels too dry. But usually, onions and lemon juice are enough for moisture.
Step 4: Second Marination
- After mixing all ingredients, let the chicken rest again for about 30 minutes to 1 hour.
- This second marination helps in locking all spices into the chicken.
Step 5: Frying Time
- Heat oil in a deep frying pan.
- Keep the flame low to medium.
- Slowly add chicken pieces one by one.
- Fry them until golden brown and crispy.
Don’t overcrowd the pan. Fry in small batches for better crispiness.
Step 6: Serve & Enjoy
Once all the pakoras are fried:
- Remove them on a paper towel to absorb extra oil.
- Serve hot with green chutney, ketchup, or a hot cup of chai.
