Ingredients for Instant Rava Uttapam
- 2 cup fine semolina (also called suji or rava)
- 1 cup curd (slightly sour gives better and good taste)
- 2 cup water (add as just you need)
- 1 tsp salt (or as per taste)
- ¾ tsp jeera (cumin seeds)
- 1 tsp red or green chili (chopped fastly)
- ½ tsp grated ginger
- 1 cup chopped coriander leaves
- ¼ tsp baking soda (optional, but for soft and for good texture)
Vegetables to Top:
- 2 chopped onion (as you need you can add)
- 1 chopped tomato
- 1 chopped capsicum
- Some extra coriander
- Optional: cabbage, k carrots, boiled corn
Through to Sprinkle:
- Chaat masala
- Black pepper powder
- Little salt for veggies
Ingredients for Coconut-Coriander Chutney
- 1 or 2 cup fresh coconut
- 1 cup coriander leaves
- 7-9 mint leaves
- 3 inch piece ginger
- 2-3 green or red chilies
- 2 tbsp roasted gram dal (pottukadalai)
- 1 or 2 tbsp curd
- Salt as per taste(as you need )
- Water as required (as you need)
Tadka (Tempering):
- 3 tsp oil
- 1 tsp mustard seeds
- 1or 2 tsp urad dal
- 1 dry red or green chili
- 7 to 8 curry leaves
Point To Point Method to Make Rava Uttapam
Step 1: Prepare the Batter
- Take 2 cup of fine semolina. If you don’t have fine rava, grind in the rava in a mixer.
- Add 2 cup curd and mix it well.
- Slowly add water (about ½ cup first) and stir. or and as you need
- The batter should be neither too thick nor too runny.
- Cover and keep aside for 30-40 minutes to let the rava soak.
Step 2: Make the Chutney as Following
- In a mixer , add coconut, coriander, mint, ginger red chilies, roasted gram, curd, and salt.
- Grind everything into a smooth chutney by adding little 2 cup water.
- For tempering, heat 3 tsp oil in a pan.
- Add mustard seeds, urad dal, curry leaves, and dry red chilli.
- Once it crackles, pour it over the chutney.
- This coconut coriander chutney is super tasty and refreshing.
Step 3: Final Batter Preparation
- After 30 minutes, semolina will be become thick.
- Add more water (almost 4 cup or more) and mix well.
- Add salt, cumin seeds, rad chili, grated ginger, coriander ect.
- Mix nicely and lastly, add 2 tsp baking soda (optional).as you need
- Stir well. Your uttapam batter is ready.
How to Cook Perfect Uttapam
- Heat pan till 40 a non-stick or iron pan have to use .
- Grease with a few spoon of oil.as you need
- Pour 2 ladle (1 tbsp) of batter on the pan.
- Don’t through thin – keep it thick like uttapam.
- Add chopped onions, tomatoes, capsicum, and coriander on top.
- Press the vegetables slightly into the batter.
- Sprinkle a little chaat masala, black pepper powder, and salt on top.
- Add a few drops of oil around the edges.
- Cover and cook on low flame for 3-4 minutes.
- Flip gently and cook the other side for 2-3 minutes.
- Remove once golden brown and veggies are cooked.

Better Tips for Perfect Uttapam
- Don’t skip soaking the batter. It helps make the uttapam fluffy soft good test .
- Use slightly sour curd for better flavor.
- We can skip baking soda, but it helps make it more fluffy.
- Don’t overcook on high flame – always use low to medium flame.
- Be creative – use any veggies you like: grated carrot, sweet corn, beetroot, spinach.
