INTRODUCTION
Good Rice for Soft and Fluffy Biryani
For perfect biryani, rice selection is crucial.
Better Choices:
- Aged Basmati Rice: Long-grain, aromatic ,soft and non-sticky.
- Golden Sella Basmati: Parboiled, sturdy grains, ideal for nice cooking.
Aged basmati rice, especially varieties like white Basmati red basmati 1121, is preferred for its elongation and aroma.
Tips for Fluffy And Yummy Test Biryani Rice
Use Basmati Rice
Aged rice has reduced moisture, leading to better grain separation and aroma.
Soak the Rice
Soak rice for 30 to 40 minutes to reduce cooking time and prevent breakage.
Use the Drain Method
Boil rice in excess water and drain when it’s 70-80% cooked. This prevents overcooking during the dum process.
Add Whole Spices
Boil rice with spices like bay leaves, cinnamon, and cardamom to infuse flavor.
Use Lemon Juice
Add lemon juice it helps to spared rice and it get better boil.
Start boiling rice on high flame, then reduce to medium to prevent sticking.
Avoid Overcooking
Cook rice until i 80%70 done; it will finish cooking during the dum process.
Veg Dum Biryani Recipe As Following
Ingredients:
- Rice: 1 kg basmati rice or any other old rice
- Vegetables: 1.5 kg mixed like (carrot, beans, potato etc.)
- Onions: 4 to 5 large, medium size onions
- Tomatoes: 3 to 4 medium, size tomatoes
- Ginger-Garlic Paste: 2 tbsp
- Green Chilies: 4, slit
- Yogurt: 1 cup
- Mint Leaves: 1 cup
- Coriander Leaves: 1 cup
- Whole Spices: Bay leaves, cinnamon, cloves, cardamom
- Biryani Masala: 3 spoon
- Red Chili Powder: 2 spoon
- Turmeric Powder:1 spoon
- Salt: to taste
- Ghee/Oil: as need

Preparation: Main Step Of Biryani As Following
- Cook Rice: Boil soaked rice with two three spices and salt until 70 to 80% cooked. Drain and set aside.
- Fry Onions: Deep fry sliced onions until golden brown. Reserve half for layering.
- Make Masala:
- Heat oil/ghee in a pan.
- Add whole spices, then ginger-garlic paste and green red chilies.
- Add chopped tomatoes, boil until soft.
- Add turmeric, red chili powder, biryani masala, and salt. Mix it properly.
- Add chopped vegetables, cook until tender.
- Add yogurt, mint, and coriander leaves. Cook until oil separates.
- Layering:
- In a heavy-bottomed pot, spread a layer of vegetable masala.
- Add a layer of boil rice.
- Through fried onions, mint, and coriander leaves.
- Get one more layer of rice
- Dum Cooking:
- Seal the pot with dough or a tight-fitting lid.
- Cook on low flame for 25-40 minutes.
- Let it rest for 20 minutes before opening
