Step 1 – Prepping the Chicken
½ kg chicken wings for this recipe. we mentions you can either buy ready-made chicken lollipops from a chicken shop or cut them yourself using chicken wings to save cost. this is also important for the chicken lollipop
Step 2 – Spice Marinade
Add the following to the chicken wings:
- Ginger-garlic paste as you need you can add it to the chicken lollipop
- Coriander powder
- Turmeric powder
- Garam masala
- Salt
- Madhura’s red chilli powder
Mix everything well so that the chicken pieces get fully coated.
“Make sure every piece is covered nicely. We want the masala to stick,” Madhura says.
Now squeeze half a lemon over the mixture.
Why lemon?
Lemon helps the chicken cook faster and makes it soft and juicy.
Step 3 – Add Egg and Color
Crack an egg into the mixture and add a little red food color (optional). Madhura says:
“Even without food color, the chicken already looks great because of our masala. Color is completely optional.”
Step 4 – Add Cornflour
Now add 2–3 tablespoons of cornflour. This helps the coating stick and makes the lollipop super crispy.
“If you don’t have cornflour, use maida, rice flour, or arrowroot powder,” suggests.
Mix everything thoroughly. Your chicken is now ready to fry!
Frying the Chicken Lollipops
Heat oil in a kadai. Keep the flame medium. gives a very important frying tip:
“Don’t drop the chicken directly into hot oil. Hold it for a few seconds above the oil, let it set a little, then release.”
This trick prevents the coating from breaking and helps keep the shape intact.
Frying Temperature
- Don’t fry on very high heat.
- Don’t fry on very low heat.
- Fry on a medium setting.
“I set my gas on level 5. It’s perfect,” says Madhura.

“Don’t crowd the kadai. Remove them one at a time so oil drains properly.”
Place them on tissue paper to remove extra oil. They look amazing!
“I haven’t eaten them yet, but I can tell they are super crispy!” Madhura laughs
