Ingredients Used

Fish:

  • ½ kg Surmai (Kingfish), cut into thick, long slices – about ½ inch thick. or you can use any other fish also to making fish fry 

For First Marination:

  • Lemon juice – from ½ lemon this give you better test while eating the fish fry 
  • 1 tbsp Ginger Garlic Paste as you need you can add it to the fish fry 
  • ¼ tsp Turmeric this is use full for the getting colure to the fish fry 
  • ½ tsp Salt as you need you add it to the fish fry 
  • Finely chopped coriander – 2 tbsp (optional but gives great aroma)

For Second Masala Coating:

  • 6 tbsp Red chili powder (1 tbsp per piece) this is also use full for getting better test  for the fish fry 
  • 2 tbsp Coriander powder as you need you can add it to the fish fry 
  • 1 tbsp Cumin powder this is also important for the fish fry 
  • 1 tbsp Garam masala this is also use full to get better test while eating fish fry 
  • 1 tbsp Black pepper powder this is also use full for the fish fry
  • Salt to taste as you need you add it to the fish fry
  • ¼ cup Water to make paste this also0 you can add as you need in the fish fry 

For Outer Coating:

  • 1 cup Fine Semolina this is also important for the fish fry 
  • 1 tsp Red chili powder this is use full for the better colure 
  • Salt – just a pinch as you need you can add it to the fish fry 

 Step-by-Step Cooking Process

Step 1: Wash and Prep the Fish 

  • Wash the fish slices nicely under clean water.
  • Use a cotton cloth or tissue paper to wipe off the excess water.
  • Do not dry the fish completely. Just lightly pat it to remove water.

Tip: Do not over-dry. Some moisture is needed for the masala to stick.

Step 2: First Marination 

  • Add lemon juice over all fish pieces. This helps to keep the fish juicy.
  • Add ginger garlic pasteturmericsalt, and chopped coriander.
  • Rub this mix on both sides of the fish.
  • Let the fish rest for 15 to 20 minutes.

Why First Marination?
It allows the fish to absorb flavor from inside and also helps the second coating stick better.

Step 3: Prepare Masala Coating 

  • In a bowl, mix:
    • 6 tbsp red chili powder (1 per piece)
    • 2 tbsp coriander powder
    • 1 tbsp cumin powder
    • 1 tbsp garam masala
    • 1 tbsp black pepper
    • Salt
  • Add about ¼ cup water and make a smooth paste.

Tip: Don’t make a thick paste. It should be smooth and easy to spread.

Step 4: Semolina Coating Mix 

  • In another plate, take:
    • 1 cup fine semolina
    • 1 tsp red chili powder
    • A pinch of salt
  • Mix well.

This outer coating gives the fish its crispy golden crust.

Step 5: Apply Masala and Semolina 

  • Now apply the masala paste on each marinated fish piece.
  • Coat both sides evenly.
  • Once masala is applied, dip each piece in the semolina mix.
  • Press gently so that semolina sticks properly.

Step 6: Frying the Fish Perfectly 

  • Take an iron or thick-bottomed pan (better heat retention).
  • Heat oil properly on medium flame.

Important:
Don’t add fish in lukewarm oil. It will release masala into the oil.
Very hot oil seals the coating and keeps masala intact.
