Step 1: Marinate the Chicken

Ingredients for Masala:
- Grated Coconut – ½ cup this is also important for the chicken sukka
- Oil – 1 tbsp this is use full for the cooking and you can add as you need
- Onion – 1 (sliced) this is use full for the the better test
- Poppy Seeds (Khus-Khus) – 1 tsp this is also important for the chicken sukka
- Desiccated Coconut – 2 tbsp if to the chicken you have this you can add
- Turmeric Powder – ½ tsp
Instructions:
- Dry roast the fresh coconut in a pan until golden brown. Transfer to a bowl.
- In the same pan, add oil.
- Once oil is hot, add sliced onion and sauté till soft.
- Add poppy seeds, stir for a minute.
- Turn off the heat.
- Transfer this mixture to a mixer jar.
- Add desiccated coconut and turmeric powder.
- Grind it into a fine paste using a little water.
This paste is your Kolhapuri Sukka Masala – spicy, rich, and flavorful.

- Oil – 2 tbsp
- Bay Leaves – 2
- Chopped Onion – 1
- Chopped Tomato – 1
- Salt – as per taste
- Red Chili Paste – 1 tbsp
- Kolhapuri Masala – 2 tsp
- Water – ½ cup
Instructions:
- Heat 2 tbsp oil in a pan.
- Add 2 bay leaves.
- Add chopped onion, sauté till golden brown.
- Add chopped tomato.
- Add a pinch of salt to help tomatoes cook faster.
- Cook till tomatoes are soft and mushy.
Step 4: Add the Chicken and Masala
Now the chicken goes into the pan.

Instructions:
- Add the marinated chicken.
- Stir and cook till chicken changes color from pink to white.
- Add the grounded masala paste.
- Add red chili paste and Kolhapuri masala.
- Stir well and sauté for 2 minutes.
Step 5: Add Water and Cook
Add little water so the masala blends properly with the chicken.
- Stir everything nicely.
- Cover the pan with a lid.
- Cook on medium flame for 5–7 minutes till chicken becomes soft and juicy.
Step 6: Final Touches and Garnish
