Part 1: Potato-Pea Masala Preparation

Ingredients Used:
- 1 tablespoon oil is use to fry sandwich properly
- 2 teaspoon mustard seeds it is not important but you have then you can add
- 1 teaspoon cumin seeds it get good test
- 7-8 chopped curry leaves it get better test
- 2 finely chopped green chilies it get better test while eating
- 2 medium onions (finely chopped) it get good colure to the sandwich
He sautés the onions for about 2-3 minutes on medium flame till they become soft. There’s no need to brown them. or you can keep it more time also cooking is the important sour of the the sandwich
Add Spices:
- ½ teaspoon turmeric powder it get good colure to sandwich
- ½ teaspoon coriander powder it is not important while mixing
- ½ teaspoon red chili powder it is also get better colure
- ½ teaspoon salt (adjust as per taste) as your need you can add
Let the spices cook for 1 minute on low flame. or you can keep more time also
Now, add the key ingredients:
- 5 boiled potatoes (roughly mashed) it is important for the sandwich
- ½ cup boiled green peas (fresh or frozen) you can add as your need
Mix them well with the spices and mash lightly using a masher. Small chunks of potatoes and peas give it a better texture. it is important for the sandwich
Add:
- ½ teaspoon garam masala masala is the second main sour of the sandwich
- 1 teaspoon chaat masala or you can add more chaat masala as your need
(You can also use amchur powder or sandwich masala as per choice)
Stir and turn off the gas. Finally, add:
- Finely chopped coriander leaves chopped properly
- 1 teaspoon lemon juice it get better test while eating
- Mix well and keep aside to cool.
Part 2: Green Chutney Preparation
While the stuffing cools, we prepares a delicious green chutney. for getting good test
Ingredients Used:
- 1 cup fresh coriander leaves you have than you can add
- 8-10 mint leaves it is used to get better shape
- 2 garlic cloves it is important for the sandwich
- 1 inch ginger add it properly
- 2-3 green chilies it get good test
- 1 tablespoon roasted chana dal (or raw peanuts) you have then you can add
Add:
- ½ teaspoon chaat masala
- ½ teaspoon salt
- ½ teaspoon sugar
Grind it with enough water to make a smooth chutney. After grinding, squeeze the juice of half a big lemon and mix it well. The chutney becomes spicy, tangy, and slightly sweet — a perfect match for the sandwich.
Part 3: Sandwich Assembly
Now it’s time to make the sandwiches.
Take 4 slices of bread (white or wheat). Apply butter on one side of each slice. You can skip butter on the inside if you want less fat.
On two slices, spread the green chutney. On the other two slices, spread tomato ketchup.
Now, place a good amount of aloo-matar stuffing on the chutney side. Spread evenly. Add cheese on top of the stuffing. Cheese is optional, but it adds extra taste. You can use mozzarella, processed, or cheese slices — whatever is available.
Cover with the other slice (ketchup side in). Your sandwiches are now ready for toasting.
Part 4: Toasting the Sandwich
Heat a grill pan or tawa on a very low flame.
Apply butter (or ghee) on the outer sides of the sandwich.
Place the sandwich on the pan, butter-side down. Toast for 3-4 minutes on each side till golden and crispy. Do not use high flame. Slow cooking helps in getting the perfect crunch.
